Place in the oven and cook for 30 minutes. Secure a piece of bacon around the meatloaf with a tooth pick. Take a medium size muffin tin and place a slice of bacon around the sides of each hole. Once ready and cool enough to handle remove the mini meatloaves from the muffin tin and serve with fresh parsley sprinkled on top. If you have mini loaf pans you can use them in step 5 instead of forming the loaves on the baking sheet.
Let any excess hang over for now divide the meatloaf mixture among the pans gently packing it in. When ready to serve heat oven to 375ºf. Using your hands shape 6 patties about 4 wide to make mini meatloaves. Cross 2 slices of bacon in each pan or ramekin pressing the bacon along the bottom and up the sides.
