A much easier version of devjled eggs is to eliminate the chopping altogether and add the mayo mustard if you like and a couple of heaping tbs of sweet pickle relish. Mix in remaining ingredients. Mix in 1 tablespoon of chopped fresh herbs chives parsley dill basil and or marjoram into the yolk mixture. Taste the mixture and add additional salt and pepper if needed.
Drain the eggs and run under cold water to cool slightly. Garnish with small julienned pieces of red bell pepper. Heat on high until water begins to boil then cover turn the heat to low. Reduce the heat to medium low. Mix 1 tablespoon cooked ham into the yolk mixture.
