Bake in the oven for 30 minutes or until the tomatoes are just starting to char. Place in oven and roast for 1 hour uncovered stirring once. In heavy dutch oven or oven proof casserole dish place the tomatoes onion garlic basil and olive oil and stir. Bake uncovered until tomatoes soften somewhat about 25 minutes. Drizzle the olive oil over the tomatoes.
Spray a large shallow baking dish with cooking oil. Sprinkle over the sugar. Add the garlic and basil leaves. Preheat the oven to 180 degrees c. Lay the tomatoes in the dish and season with salt and pepper.
Add chopped green tomatoes green hot pepper and salt in it and sauté over low medium heat for 2 3 minutes. If you like a spicy taste then add more green hot peppers. Season with salt pepper and red pepper flakes. In a mini food processor chop the garlic and basil together. Preheat oven to 400 degrees f.
