Cook for about 8 mins until softened. Meanwhile snap the woody ends from the asparagus and cut the spears into 3 4cm lengths. Add the asparagus onion and sun dried tomatoes to the pan. Add the potatoes and toss to coat fully before roasting for 20 minutes. Mix in the asparagus remaining olive oil and remaining salt.
Season with pepper to serve. Sauté shallots in hot oil in a large nonstick skillet 1 minute. Roast at 400 for 20 minutes stirring once. Give the potatoes to the pan and cook on medium heat stirring often until golden on all sides. Put the potatoes in a pan of cold salted water and bring to the boil.
Meanwhile heat the oil in an ovenproof frying pan and add the onion. Cook for 8 to 12 minutes until the asparagus is tender depending on the thickness of the asparagus. Cook the potatoes until golden stirring occasionally about 7 minutes. Sauté 2 to 3 minutes or until asparagus is crisp tender. Toss to coat and cook for a further 15 minutes.

Transfer to a greased 15x10x1 in. This should take about 5 minutes. Add the asparagus to the skillet and roast uncovered for 10 to 13 minutes. Cut the potatoes into similarsized small chunks. Put them in a large roasting tray with the garlic add the olive oil and some salt and pepper and toss well.
In a small bowl combine the potatoes 2 tablespoons oil rosemary and garlic. Remove from heat and sprinkle with cheese. Roast 15 20 minutes longer or until vegetables are tender stirring occasionally. Cut the halloumi into 2cm cubes. Cover and continue cooking 15 minutes or until the potatoes are tender.
Add to the pan. After 20 minutes add the asparagus with a little extra olive oil if needed. Roast for 30 minutes. Cover the skillet and place in the oven until the potatoes are fork tender about 25 minutes. Preheat oven to 200c 390f.

In a large roasting tin add the olive oil balsamic vinegar and salt. Add to the pan. In a small bowl combine the potatoes 2 tablespoons oil rosemary and garlic. Transfer to a greased 15x10x1 in. Increase oven temperature to 450 degrees f 230 degrees c.
Remove foil and continue cooking 5 to 10 minutes until potatoes are lightly browned. Meanwhile heat the oil in an ovenproof frying pan and add the onion. Season with pepper to serve. Cook for about 8 mins until softened.
