Preheat the oven to 350 degrees f. With 1 1 2 cups of the crackers press into a 9 inch pie pan or casserole dish. 1 1 2 cups all purpose flour. Slice and saute the onions until cooked but not brown. Add 4 pounds vidalia onions cut into wedges and cook 5 minutes.
Bake at 350 degrees f for 30 minutes or until firm in the center. Pour mixture into the ritz cracker pie crust and sprinkle remaining crushed crackers to the top of the mixture. 1 pie crust baked. Melt 4 tablespoons butter in a stoveproof gratin dish over medium high heat. 1 large tomato sliced.
1 tablespoon balsamic vinegar. Beat eggs with milk salt and pepper and pour over onions. 1 3 cup plain bread crumbs. Saute onions with 2 t butter until clear not brown. Bake 30 50 c5 minutes.

1 4 cup cold all vegetable shortening cut into small pieces. 3 tablespoons butter melted. 1 recipe savory pie crust recipe follows. 7 large vidalia onions chopped. Top with bacon and serve.
