I ve been doing this recipe for years and adore it. I love using coconut oil in recipes that include coconut milk however peanut or vegetable oil can be used. I couldn t taste the coconut milk at all. I always undercook the shrimp too so that they re not overcooked by the time i serve the soup. I was hoping for a soup with true coconut milk and shrimp flavor both of which are completely overwhelmed by other ingredients particularly the tomatoes.
