Cover the baking dish tightly with foil and bake for 20 minutes. Arrange pork chops atop the sauerkraut and then top with the browned onions. Remove set aside until all chops browned. Remove the foil and continue cooking for 10 minutes or until the chops reach 145 f. Heat a cast iron or oven safe casserole pan over medium heat add olive oil.
Spoon the sauerkraut mixture into the prepared baking dish. Cover pork chops with the mixture. I use about 1 inch thick pork chops. Heat oil in a skillet over medium high heat and pan fry pork chops on both sides until browned 5 to 7 minutes per side. Season pork with pepper and garlic powder.
Place browned pork chops into the prepared casserole dish. Sear pork chops to brown on both sides. Place the chops into a 9x13 inch baking dish. Step 3 combine sauerkraut apple onion brown sugar and caraway seeds in a bowl.
