A light dinner of vidalia onion pie a nice salad on the side and a ice cold glass of homemade lemonade is perfect for hot summer nights. All versions are great. Add the onions and sauté until lightly browned. It s completely optional but since i have fresh chives in my herb garden they re a perfect garnish for this recipe.
Add the onions and saute until lightly browned. In a medium saucepan melt the butter over medium heat. Melt remaining 2 tablespoons butter in heavy medium skillet over medium heat. Add onions and sauté until tender about 12 minutes. Bake at 350 degrees f for 30 minutes or until firm in the center.
Beat eggs with milk salt and pepper and pour over onions. Preheat oven to 325 f. Sprinkle with cheese and paprika. Optional additions can be sweet red pepper to the onions as they cook and or crumbled bacon or fresh ham bits may be added to the mixture prior to baking. Saute onions with 2 t butter until clear not brown.
